Tasting Notes
Brilliant and pale yellow. The most typical aromas are nuances of citrus fruits (grapefruit, lemon), exotic fruits (mango and litchi), floral notes (white flowers and shrub broom), greener notes (blackcurrant leaf, asparagus), spices (liquorice), and mineral (smoky, flint). In the mouth the initial attack is lemony. It wakes up the taste buds, allowing the perception of spiciness on the tip of the tongue. The second impression shows the suppleness and volume of the wines from the ‘stony’ vineyards, blending nicely with the mineral vivacity of the wines from the flint soils. The white wines can generally be kept for between 3 and 4 years.
Winemaker Notes
Gilles Lesimple is fortunate to own land covering the three main Sancerre terroirs. The wines are vinified separately, in temperature controlled cement tanks. Gilles then blends and ages the wine in stainless steel, creating a wine that reflects each vintage. One will find fresh and joyous aromas, ranging from floral to exotic fruits, a hint of citrus, with a tight, lemony and joyful mouth. Aromas of apricot jam and lemon, with a finish of dry fruits.
Other Notes
Sauvignon Blanc is a variety that communicates particularly well the character of the terroir on which it is grown. On the limestone bedrocks it shows wines that open up very early. By contrast, the flint-clay soils give a slower developing wine, which can therefore be kept for longer. This variety can develops aromas such as litchi, grapefruit and acacia, lime tree, box tree, broom and asparagus.
