Vineyard Notes
Domaine Serge Laporte has been a family estate for more than 7 generations. The estate is spread over 3 plots, Thauvenay, Ménétréol sous Sancerre and Vinon. The vines are planted on limestone soils, producing aromas of citrus and mineral notes with a smooth, natural acidity. The wine estate has HVE3 certification, a High Environmental Value farming certificate. Additionally operating to organic practices under the label certification Ecocert.
Production Notes
Grapes are harvested at night to help the concentration of the aromas, the flavors and to control the oxidation of fruits. Yields are limited to optimize and harvest is started by maturity of each plot and hand sorted. Grapes are slowly pressed to release their aromas and fermentation is controlled between 16 C degrees - 21C degrees during 4 weeks. Wine matures on its lees in stainless steel tanks with nitrogen protection to reduce sulfites until the bottling is done in Spring.
Food Pairing Notes
Pairs well with pork, salmon, tuna, goat cheese.
