Cavas and Wines from Castell d’Or are the result of the great job done by the eight-cooperatives located in several wine regions of Catalonia. The characteristics from each one of these regions gives them a unique personality. Castell d’Or is in the Penedes Appellation, a landscape marked by calcareous land, hills, forest and above all, Mediterranean climate. In this region, you can find vineyards from 500 meters above sea level, creating several microclimates. All these conditions make Penedes Appellation wine singular and valued around the world.

Wine Profile
Tasting Notes
Pale small, lingering bubble. On the nose, aromas of ripe fruit and citrus with floral notes. The palate is lively with lingering notes of white fruits and delicate citrus. The influence of the mountains and the Mediterranean climate give Cava Castell d’Or a well-balanced, elegant and clean finish that is distinguished by its floral notes and balanced acidity.

Varietals: 40% Macabeo, 40% Xarel-lo, 20% Parallada
Production Notes
This Cava is classified as a Cava de Guarda, and spends more than 12 months in the bottle where it undergoes the second fermentation to acquire its bubbles. After this, we start the riddling process: the sediments, resulting from the depletion of the yeasts, are deposited in the neck of the bottle, thanks to a daily rotation of the bottles carried out in our cellars. The native yeasts lend our cava its unique personality.
Winemaker Notes
This cava is produced in the Cava D.O. using the traditional method, which consists of carrying out the second alcoholic fermentation in the bottle. Each grape variety is harvested and fermented separately. For the second fermentation, the bottles are stored in underground cellars at a constant temperature of 15°-17°C with the wines remaining in contact with their yeasts.
Food Pairing Notes
The fruity notes and balanced acidity nicely set off the delicate flavors of seafood such as grilled shrimp and oysters. Perfect with appetizers, rice dishes, pasta and creamy cheeses.
